Adobo Seasoning

Adobo seasoning has its origins primarily in the Philippines, where it is deeply rooted in the country's culinary traditions. The term "adobo" comes from the Spanish word "adobar," meaning "to marinate," and reflects the influence of Spanish, Chinese, and Malay cultures on Filipino cuisine. The practice of marinating meats with vinegar and spices dates back to the pre-colonial period, where indigenous people used local ingredients. During the Spanish colonization (1565–1898), the Spaniards adopted and named the local cooking method "adobo," further solidifying its place in Filipino culture.

Idea

Using chicken thighs or drumsticks mix a sachet of Pinkywinks with a tablespoon of honey and tablespoon of sunflower oil to make a paste
Rub paste into chicken and leave to marenade for around 2 hours
Roast in basting chicken with juices
Served perfectly with sticky cocnut rice and pickled vegetables
